Filter coffee is an emotion – one that finds its roots in south India but travels across the country and even the world over, as people enjoy the delicious concoction.
Every year, International Coffee Day 2025 is observed on October to celebrate the unique beverage, and farmers around the world.
While India is known for its tea, coffee gives it tough competition among the beverages. There are quite a few coffees that are popular in the country, but the filter coffee is extremely popular and transcends time.
Over the years, Indian chefs have taken the liberty to make use of the traditional flavours to create new dishes. If you love the variation of coffee, they say you should not only try to make Filter Coffee Panna Cotta with Jaggery Caramel Drizzle, but also the filter coffee.
Filter Coffee Panna Cotta with Jaggery Caramel Drizzle
Anshul Dhyani, executive chef at ITC Grand Central in Parel in Mumbai celebrates the filter coffee with a panna cotta. He says, “Filter coffee carries a soul rich, earthy, and evocative. Transformed into a panna cotta, this timeless brew evolves into something modern smooth, aromatic, and luxuriously indulgent. It’s a delicious harmony of heritage and innovation, crafted to linger on the palate.”
Ingredients:
Fresh South Indian filter coffee (strong decoction) 200 ml
Fresh cream 200 ml
Full cream milk 100 ml
Sugar (or jaggery for a richer note) 80 gm
Gelatin (or agar-agar for vegetarian option) 2 tsp
Cardamom powder pinch
Jaggery caramel sauce (melted jaggery with a touch of butter and sea salt)
Method:
1. In a saucepan, combine cream, milk, sugar, and filter coffee decoction.
2. Warm gently without boiling.
3. Stir in the cardamom powder for a subtle spice lift.
4. Bloom gelatin in warm water and whisk into the coffee mixture until dissolved.
5. Pour into ramekins or glasses and set in the refrigerator for 4–5 hours.
6. Drizzle with jaggery caramel sauce just before serving.
7. Garnish with micro mint or cocoa nibs.
